Caprese Crustless Quiche

You can't go wrong with a mozzarella-tomato-basil combination as this baked crustless quiche confirms. Great main course for breakfast or lunch.


  • 6-8 eggs, depending on size

  • 1 cup shredded fresh mozzarella cheese

  • 1/2 cup cream

  • 1 tomato, chopped

  • 1 tomato, sliced into rounds

  • 6 basil leaves, chopped, some reserved for serving

  • Salt and pepper (approx. 1 t salt and 1/2 t pepper)


  1. Preheat over to 375 degrees

  2. Mix eggs, chopped tomatoes, shredded cheese, 1/2 of basil, salt and pepper into a large mixing bowl

  3. Pour into greased round pie pan

  4. Lightly place sliced tomatoes on top of mixture

  5. Bake for 30 minutes until eggs set but not overcooked

  6. Sprinkle reserved basil on top and serve along with salad or fruit
