Quick & Easy Mini Caprese

Mozzarella, basil, tomato. A trifecta of ingredients that create a wonderful balance of flavors and is the perfect salad to accompany most any meal, or serve as a delicious lunch. Thread them on a toothpick and they create a beautiful appetizer.


  • 1 cup fresh mozzarella ciliegine (small balls packed in water)

  • 1 cup cherry or grape tomatoes, halved (use mixed colors if available)

  • 5 basil leaves, rolled and sliced into strips

  • Marinate: 1 t olive oil, 1 t balsamic vinegar, 1 t salt, ½ t black pepper


  1. Mix first three ingredients into a bowl, drizzle marinate on top. Add additional marinate if needed or desired. Serve cold.

Note: Caprese salads can be jazzed up in many ways, you can add chopped red onions, diced avocado, or pinenuts. Serve over a bed of chopped romaine for a leafier salad or mixed with fusilli pasta for a pasta salad.
